This recipe was very easy. I followed some of the feedback from other peeps and added the juice of 1 lemon to the batter. It came together without much of a hitch.I was thankful for that because it had been one very long week and I was starting it after an all day seminar on Friday evening. I followed the instructions as stated in the book and then put it in the oven.I tested to see if it was done and took it out. I had expected it to be a little taller but oh well! I let it cool and then released it from the pan, once again no issue here. I decided a little glaze would add to it, so mixed lemon juice and powder sugar. My kitchen assistant thought it was very good, I agreed. It was moist and lemony. I think I may have under baked it a tad as towards the middle of the loaf it was slightly underdone. I brought it to day 2 of the seminar and all thought it was very tasty. It seems like a nice breakfast bread and I would consider making it again.
Love your glaze! It looks wonderful. I thought it was moist too 🙂
My loaf didn’t rise very much either, but it was tasty all the same.
Doesn’t the lemon icing just bring it up a notch? YUM.
A glaze sounds like a great addition. I hope your seminar was made better with yummy lemon loaf cake. 🙂
Your cake looks great with the glaze.. I did not think mine was moist enough, maybe because it was so dense I thought it was dry, not sure.. It went well with whipped cream and berries though..
I did find it wasa a good breakfast too!!
Jane, your cake came out nice. Yes, the glaze was crucial!

the glaze looks pretty. I ate mine for breakfast so I do agree that it is a good breakfast loaf.
Very nice & yes, this one needed the glaze, for sure.
I like your glaze–I think something was definitely needed.
