Hungarian Shortbread:TWD/Baking with Julia May 1, 2012

I tried this recipe on Sunday. It was part of a cookie extravaganza, 4 cookies in one day!! I had read the other baker’s posts (which have been incredibly helpful) and decided to cut the recipe in half and use a 8 inch square pan.  I was unclear if I would really like this recipe and it seemed like a lot of butter to use if I didn’t care for it. I followed the recipe as written until I had grated the bottom layer. I then baked this for 15 minutes. I  spread apricot jam on the bottom  and then grated  the top layer. (Grating the bottom layer, enjoyed the process!! Grating the top layer, not so much) I put it in the oven and started watching it at 35 minutes. I continued baking for another 10 minutes and it looked good. I  let it cool for a while and then sprinkled it with powder sugar. I took it out of the pan and  cut it into small pieces and tried a sample. Very sweet, it seemed like a good consistency and yet not fabulous. I took some to a friend and said it was a semi loser cookie. Loser cookies are the ones that don’t quite make the grade, this was a semi loser meaning it had possibility. The kitchen assistant came one and tried it, not a loser !!was the proclamation.Compared to the other cookies I made that day it took last place.Definitely glad I tried it but given the other successes of the day I wouldn’t make it again.

    What other cookies did you make? Don’t leave us hanging like that. 🙂 I thought these were pretty good, but different tastes and all that.

    It was a good idea to halve the recipe. I liked the cookie, but it is so rich I’m not sure if I’ll make it again.

  4. i did the same and baked half in an 8″ square. i agree with the assistant–not a loser! 🙂

    Apricot jam sounds tasty. I am impressed that you made four kinds of cookies in one day. I usually lose patience before I finish the first batch of cookies 🙂

    I also thought this was a bit too sweet, but very delicious and addictive…I wish I halved it, too! Yours looks lovely!

    So sorry it didn’t work for you but maybe you were on cookie overload. One of those little Hungarian Shortbread bars does it for me! WHAT WERE YOUR OTHER COOKIES.

      The other cookies were Ina garten’s shortbread dipped in chocolate, Maida Heatter’s McMaida shortbread and Baker’s Royale coffee cake cookies.
